2 Lg Avocado, ripe
400 gram Canned Salmon drained and flaked with a fork
1 Apple, peeled cored and finely diced
3 tbsp Red onion, peeled and finely diced
3 tbsp Walnuts, finely chopped
1/4 cup Mayonnaise, good quality (free range)
2 tsp Lemon juice, freshly squeezed
Salt and pepper, to taste
- Cut the avocados in half and remove the seed. Gently scoop out some of the flesh if you think you need a larger hollow (if the seed was only small) to fill your avocado with the filling. Dice up any excess avocado flesh and add to the filling mixture.
- Add all the filling ingredients to a mixing bowl and gently mix together.
- Fill each avocado with the tuna mixture, adjust seasonings to taste and serve immediately.
- Serve on its own or with a slice or two of grilled sourdough and freshly squeezed lemon.
